A few weeks ago I was fortunate enough to find garlic scapes in my Greenling local box. Having never heard of scapes, much less tasted them before, I hit the interwebs to figure out how to use these twisty green tendrils. Scapes are essentially sprouted garlic. Here’s a great article on garlic scapes if you’d like to learn more. They have an intense, sweet garlic flavor, but without the spicy bitterness you sometimes get with whole cloves. I thoroughly enjoyed them.

I chopped them up into salads, seared chicken breasts with them, but my favorite use was on pizza. This simple pie was just whole wheat crust, mozzarella, parmesan, romano and the yummy scapes with a light drizzle of olive oil after it comes out of the oven. It essentially was cheesy garlic bread on crack. Freaking delicious!
If you happen upon scapes next time you’re at the farmer’s market, I highly encourage the purchase. I recently found a recipe for scape pesto (in the above article) and can’t wait to try it!
